All the varieties are sourced from single regions in Australia’s premier wine-growing areas and the end result is magnificent, luxurious, artisan wine developed with love and care. Stemming from the 2013 vintage’s lack of labour for hand harvesting and the resulting 2013 Pewter Semillon’s pure deliciousness, in 2014 we decided again to machine harvest our revered Blackberry vineyard. And what a decision it was to make! The fruit had a short trip to the winery on broken skin, a gentle attribute of the technological advancement in machine harvesting equipment. This short skin contact period enabled a delicate extraction from skin to juice of floral, citrus, flinty flavour compounds. The wine was then fermented with a neutrally aromatic Champagne yeast strain to preserve the juice’s fruit purity, after which it was lightly fined, filtered and bottled.
