Upon arrival at the winery, the fruit is promptly crushed and pressed. The resulting juice undergoes clarification before being inoculated with yeast to initiate fermentation. Fermentation is carefully managed at lower temperatures to preserve the delicate varietal characteristics.
Once the primary fermentation is complete, the wine is racked, fined, and filtered to ensure clarity and quality before bottling.
