Our grapes are sourced from the beautiful Lower Hunter Valley vineyards, all grown using the Vertical Shoot Positioning (VSP) system for optimal quality. Upon arrival at the winery, the fruit is carefully crushed and destemmed. We use a combination of Alpha and CX9 yeasts for fermentation, ensuring a cool ferment to preserve the fresh, vibrant fruit flavors. A partial malolactic fermentation (MLF) occurs in barrel before the wine is expertly blended and bottled, creating a refined and balanced finish.
