The LS Coast wine region’s terra rossa soil with layers of limestone gives its grapes a distinctive flavour.
Vines are grown with VSP trellis. Fruit is crush and pressed on arrival to winery. Juice is clarified prior to inoculating with yeast to start fermentation.
Lower temperature on fermentation to maintain those beautiful varietal characters.
Once fermentation is complete then wine is racked, fined and sent to bottle.
