Fruit for this wine is sourced from the Chalmers Family Vineyard located in Merbein, just outside of Mildura. Merbein is a semi-arid climate with hot summers and cool winters. It has a low average rainfall of 280mm and is considered hot, with long sunshine hours, low humidity, and negligible growing season rainfall.
The fruit for this wine was picked and delivered to the winery where it was crushed and destemmed. Ansonica is characterised by its thick skins and crunchy but juicy flesh, resulting in a more textural wine. When making this wine we lent into that textural component by clarifying the the free run juice which was treated in a more traditional style. However, the pressings component was fermented on partial solids with the aim of building that texture and complexity. The free run and pressings were then blended back together prior to bottling.
