The Uno Series represents the very best of Hunter Valley winemaking. Luxurious and elegant, wines are only made in exceptional vintages in very small quantities.
Out of one of the best Hunter Valley vintages on record comes the first, and at this stage only, a throwback to the Hunter River Burgundy styled wines of pre-1983 and the European Wine Agreement. This single-vineyard wine was sourced from the Bainton Family vineyard in the Broke parish of the Hunter Valley. The Pinot Noir portion has undergone carbonic maceration for 7 days before its entire whole bunch fermentation, then pressed off into old French barrels to complete its malolactic fermentation. The Shiraz portion of the blend has undergone extended post ferment maceration before being pressed off into a mix of new French and American oak.
